A sugar-containing product comprising an enzymatically saccharified cellulosic or lignocellulosic biomass extract comprising molecular xylose and molecular glucose, wherein the xylose/glucose ratio is the same as the xylose/glucose ratio of xylose and glucose sugar units found in the free sugars and polysaccharides of the source biomass and wherein the extract is substantially free of cellulosic or lignocellulosic biomass,wherein the product is a human or animal food product having a glycemic index of less than 50,and wherein the product further comprises a preservative, an emulsifying agent, a stabilizer, a humectant, or an anticaking agent.
