In certain example embodiments, the window structure includes a slidable window panel or sheet located between a pair of fixed window panels or sheets. The slidable window panel may have a hydrophilic coating on an interior major surface thereof for anti-fogging purposes.

forming a slidable window panel by using flame pyrolysis to (a) deposit a layer comprising silicon oxide on a glass substrate and/or (b) treat a layer comprising diamond-like carbon (DLC), thereby forming a hydrophilic layer having a contact angle θ
of less than about 25 degrees; and
