Abstract

A roller assembly for a meat skinning device having a frame, a drive shaft rotatably mounted to the frame and having a female groove, and an elongated roller having a male prong frictionally received within the female groove, a bearing housing secured to the drive shaft, and a seal mounted on the roller and separated from a food zone of the roller.

Claims

1. A roller assembly for a meat skinning device having a frame comprising:

an elongated roller having a male prong extending outwardly that is received within a female groove of a drive shaft.

2. The device of claim 1 wherein the male prong is retained within the female groove by a bolt.

3. The device of claim 2 wherein a retaining device on the bolt allows reversal of the bolt to separate the male prong from the female groove.

4. The device of claim 1 wherein the roller is a tooth roll.

5. The device of claim 1 wherein the roller is a stripper roll.

6. The device of claim 1 wherein the roller is operatively connected to a gear box having a reduction gear assembly.

7. The device of claim 1 wherein a seal is mounted on the roller and separated from a food zone of the roller.

8. A roller assembly for a meat skinning device having a frame comprising:

a drive shaft rotatably mounted to the frame;

a bearing housing secured to the drive shaft;

an elongated roller secured to the drive shaft; and

a seal mounted on the roller and separated from a food zone of the roller.

9. The device of claim 8 wherein the seal is a double lip seal.

10. The device of claim 8 further comprising a groove on the roller adjacent the bearing housing.

11. The device of claim 10 wherein the groove forms a shoulder adjacent the bearing housing.

12. The device of claim 11 wherein the seal is retained by the shoulder and is substantially enclosed by the bearing housing.

13. The device of claim 8 wherein the roller is a tooth roll.

14. The device of claim 8 wherein the roller is a stripper roll.

15. The device of claim 8 wherein the roller is operatively connected to a gear box having a reduction gear assembly.

16. The device of claim 8 wherein the drive shaft has a female groove.

17. The device of claim 16 wherein the roller has a male prong frictionally received within the female groove.

19. The device of claim 11 further comprising a worm gear operatively connected to the reduction gear assembly for driving a reciprocating manifold.

20. The device of claim 19 wherein the worm gear is driven by a worm gear shaft connected to the reduction gear assembly.

21. The device of claim 19 wherein the worm gear drives a crank shaft connected to the reciprocating manifold.

18. A gear box for use with a meat skinning device comprising:

a housing;

an opening in the housing adapted to receive a drive shaft;

a stripper roll operatively connected to the drive shaft;

a reduction gear assembly disposed within the housing and operatively connected to the stripper roll and a tooth roll.

22. The device of claim 18 wherein the reduction gear assembly has a first gear mounted to the stripper roll, a second gear mounted to the tooth roll, and reduction gears operatively mounted to the first and the second gears.

23. The device of claim 22 wherein the stripper roll has a male prong frictionally received within the female groove of a drive shaft.

24. The device of claim 22 wherein the tooth roll has a male prong frictionally received within the female groove of a drive shaft.

25. The device of claim 18 wherein a seal is mounted on the stripper roll and separated from a food zone of the roll.

26. The device of claim 18 wherein a seal is mounted on the tooth roll and separated from a food zone of the roll.
