Abstract
The present invention relates generally to functional sweetener compositions comprising non-caloric or low-caloric natural and/or synthetic high-potency sweeteners and methods for making and using them. In particular, the present invention relates to different functional sweetener compositions comprising at least one non-caloric or low-caloric natural and/or synthetic high potency sweetener, at least one sweet taste improving composition, and at least one functional ingredient, such as a hydration product. The present invention also relates to functional sweetener compositions and methods that can improve the tastes of non-caloric or low-caloric high-potency sweeteners by imparting a more sugar-like taste or characteristic. In particular, the functional sweetener compositions and methods provide a more sugar-like temporal profile, including sweetness onset and sweetness linger, and/or a more sugar-like flavor profile.

1. A functional sweetener composition comprising:

6. The functional sweetener composition of claim 1, wherein the at least one hydration product has an osmotic pressure less than the osmotic pressure of the human body.

13. The functional sweetener composition of claim 1, wherein the at least one hydration product comprises at least one electrolyte and at least one carbohydrate.

14. The functional sweetener composition of claim 13, wherein the at least one electrolyte is present in an amount from about 50 mg to about 5,000 mg and the at least one carbohydrate is present in an amount from about 1 g to about 20 g.

15. The functional sweetener composition of claim 13, wherein the at least one electrolyte is present in an amount from about 75 mg to about 300 mg and the at least one carbohydrate in an amount from about 1 g to about 5 g.

19. The functional sweetener composition of claim 1, wherein the at least one sweet taste improving composition imparts a more sugar-like temporal profile to the sweetener composition than the at least one high-potency sweetener would have without the at least one sweet taste improving composition.
