Abstract

The present invention relates generally to tabletop sweetener compositions comprising non-caloric or low-caloric natural high-potency sweeteners and methods for making and using them. In particular, the present invention relates to different forms of tabletop sweetener compositions comprising at least one non-caloric or low-caloric natural high-potency sweeteners in combination with at least one bulking agent, or at least one sweet taste improving composition, or at least one anti-caking agent, or combinations thereof. The present invention also relates to tabletop compositions and methods that can improve the tastes of non-caloric or low-caloric natural high-potency sweeteners by imparting a more sugar-like taste or characteristic. In particular, the tabletop compositions and methods provide a more sugar-like temporal profile, including sweetness onset and sweetness linger, and/or a more sugar-like flavor profile.

Claims

1. A tabletop sweetener composition comprising at least one natural high-potency sweetener and at least one sweet taste improving composition.

2. The tabletop sweetener composition of claim 1, further comprising at least one bulking agent.

3. The tabletop sweetener composition of claim 1, further comprising at least one anti-caking agent.

4. The tabletop sweetener composition of claim 1, further comprising at least one bulking agent and at least one anti-caking agent.

5. The tabletop sweetener composition of claim 1, wherein the at least one sweet taste improving composition functions as a bulking agent.

6. The tabletop sweetener composition of claim 1, wherein the at least one sweet taste improving composition functions as an anti-caking agent.

7. The tabletop sweetener composition of claim 1, wherein the tabletop sweetener composition is in the form of a solid, a liquid, a powder, granules, a tablet, a cube, or a pellet.

The tabletop sweetener composition of claim 1, wherein the at least one natural high-potency sweetener is selected from the group consisting of rebaudioside A, rebaudioside B, rebaudioside C, rebaudioside D, rebaudioside E, rebaudioside F, dulcoside A, dulcoside B, rubusoside, stevia, stevioside, mogroside IV, mogroside V, Luo Han Quo sweetener, siamenoside, monatin and its salts (monatin SS, RR, RS, SR), curculin, glycyrrhizic acid and its salts, thaumatin, monellin, mabinlin, brazzein, hernandulcin, phyllodulcin, glycyphyllin, phloridzin, trilobatin, baiyunoside, osladin, polypodoside A, pterocaryoside A, pterocaryoside B, mukurozioside, phlomisoside I, periandrin I, abrusoside A, cyclocarioside I, and combinations thereof.

The tabletop sweetener composition of claim 1, wherein the sweet taste improving composition is selected from the group consisting of carbohydrates, polyols, amino acids and their corresponding salts, polyamino acids and their corresponding salts, sugar acids and their corresponding salts, organic acids, inorganic acids, organic salts, inorganic salts, bitter compounds, flavorants, astringent compounds, polymers, proteins or protein hydrolysates, surfactants, emulsifiers, flavonoids, alcohols, synthetic sweeteners, and combinations thereof.

The tabletop sweetener composition of claim 2, wherein the sweet taste improving composition is selected from the group consisting of carbohydrates, polyols, amino acids and their corresponding salts, polyamino acids and their corresponding salts, sugar acids and their corresponding salts, organic acids, inorganic acids, organic salts, inorganic salts, bitter compounds, flavorants, astringent compounds, polymers, proteins or protein hydrolysates, surfactants, emulsifiers, flavonoids, alcohols, synthetic sweeteners, and combinations thereof.

The tabletop sweetener composition of claim 2, wherein the bulking agent is selected from the group consisting of maltodextrin, corn syrup solids, sucrose, fructose, glucose, invert sugar, sorbitol, xylose, ribulose, mannose, xylitol, mannitol, galactitol, erythritol, maltitol, lactitol, isomalt, maltose, tagatose, lactose, inulin, glycerol, propylene glycol, polyols, polydextrose, fructooligosaccharides, cellulose and cellulose derivatives, and mixtures thereof.

12. The tabletop sweetener composition of claim 3, wherein the anti-caking agent is selected from the group consisting of cream of tartar, calcium silicate, silicon dioxide, microcrystalline cellulose, tricalcium phosphate, and mixtures thereof.

13. The tabletop sweetener composition of claim 1, wherein the at least one natural high-potency sweetener comprises rebaudioside A, stevia, stevioside, or combinations thereof.

14. The tabletop sweetener composition of claim 13, wherein the at least one sweet taste improving composition comprises a polyol.

15. The tabletop sweetener composition of claim 14, wherein the at least one polyol comprises erythritol.

16. The tabletop sweetener composition of claim 14, wherein the at least one polyol comprises xylitol.

17. The tabletop sweetener composition of claim 13, wherein the at least one sweet taste improving composition comprises at least one amino acid.

18. The tabletop sweetener composition of claim 17, wherein the at least one amino acid comprises glycine, alanine, proline, hydroxyproline, glutamine, or combinations thereof.

19. The tabletop sweetener composition of claim 13, wherein the at least one sweet taste improving composition comprises at least one polyamino acid.

20. The tabletop sweetener composition of claim 19, wherein the at least one polyamino acid comprises poly-L-aspartic acid, poly-L-α

-lysine, poly-L-ε

-lysine, poly-L-α

-ornithine, poly-L-ε

-ornithine, poly-L-arginine, salts thereof, or combinations thereof.

21. The tabletop sweetener composition of claim 13, wherein the at least one sweet taste improving composition comprises at least one inorganic salt.

22. The tabletop sweetener composition of claim 21, wherein the at least one inorganic salt comprises a sodium, potassium, calcium, or magnesium salt.

23. The tabletop sweetener composition of claim 21, further comprising at least one inorganic phosphate.

24. The tabletop sweetener composition of claim 23, wherein the at least one inorganic phosphate comprises a sodium, potassium, calcium, or magnesium phosphate.

25. The tabletop sweetener composition of claim 21, further comprising at least one inorganic chloride.

26. The tabletop sweetener composition of claim 25, wherein the at least one inorganic chloride comprises a sodium, potassium, calcium, or magnesium chloride.

27. The tabletop sweetener composition of claim 13, wherein the at least one sweet taste improving composition comprises at least one carbohydrate.

28. The tabletop sweetener composition of claim 27, wherein the at least one carbohydrate comprises sucrose, high fructose corn syrup, glucose, or sucrose.

29. The tabletop sweetener composition of claim 13, wherein the at least one sweet taste improving composition comprises at least one synthetic high-potency sweetener.

30. The tabletop sweetener composition of claim 29, wherein the at least one synthetic high-potency sweetener comprises saccharin or acesulfame potassium or other salts.

31. The tabletop sweetener composition of claim 13, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 70% rebaudioside A by weight on a dry basis.

32. The tabletop sweetener composition of claim 13, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 80% rebaudioside A by weight on a dry basis.

33. The tabletop sweetener composition of claim 13, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 90% rebaudioside A by weight on a dry basis.

34. The tabletop sweetener composition of claim 13, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 97% rebaudioside A by weight on a dry basis.

35. The tabletop sweetener composition of claim 13, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 98% rebaudioside A by weight on a dry basis.

36. The tabletop sweetener composition of claim 13, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 99% rebaudioside A by weight on a dry basis.

37. A packaged tabletop sweetener composition comprising the tabletop sweetener composition as in claim 1 disposed in a portion control packet or a sachet.

39. The tabletop sweetener composition of claim 37, further comprising at least one anti-caking agent.

40. The tabletop sweetener composition of claim 37, wherein the tabletop sweetener composition is in the form of a solid, a liquid, a powder, granules, a tablet, a cube, or a pellet.

41. The tabletop sweetener composition of claim 37, wherein the at least one natural high-potency sweetener is selected from the group consisting of rebaudioside A, rebaudioside B, rebaudioside C, rebaudioside D, rebaudioside E, rebaudioside F, dulcoside A, dulcoside B, rubusoside, stevia, stevioside, mogroside IV, mogroside V, Luo Han Quo sweetener, siamenoside, monatin and its salts (monatin SS, RR, RS, SR), curculin, glycyrrhizic acid and its salts, thaumatin, monellin, mabinlin, brazzein, hernandulcin, phyllodulcin, glycyphyllin, phloridzin, trilobatin, baiyunoside, osladin, polypodoside A, pterocaryoside A, pterocaryoside B, mukurozioside, phlomisoside I, periandrin I, abrusoside A, cyclocarioside I, and combinations thereof.

42. The tabletop sweetener composition of claim 37, wherein the bulking agent is selected from the group consisting of maltodextrin, dextro-maltodextrin blends, corn syrup solids, sucrose, fructose, glucose, invert sugar, sorbitol, xylose, ribulose, mannose, xylitol, mannitol, galactitol, erythritol, maltitol, lactitol, isomalt, maltose, tagatose, lactose, inulin, glycerol, propylene glycol, polyols, polydextrose, fructooligosaccharides, cellulose and cellulose derivatives, and mixtures thereof.

43. The tabletop sweetener composition of claim 37, wherein the anti-caking agent is selected from the group consisting of cream of tartar, calcium silicate, silicon dioxide, microcrystalline cellulose, and tricalcium phosphate, and mixtures thereof.

44. The packaged tabletop sweetener composition comprising the tabletop sweetener composition of claim 37 disposed in a portion control packet or a sachet.

38. A tabletop sweetener composition comprising at least one natural high-potency sweetener and at least one bulking agent.
