Abstract

The present invention relates generally to functional sweetener compositions comprising non-caloric or low-caloric high-potency sweeteners and methods for making and using them. In particular, the present invention relates to different functional sweetener compositions comprising at least one non-caloric or low-caloric natural and/or synthetic high potency sweetener, at least one sweet taste improving composition, and at least one functional ingredient, such as an anti-inflammatory agent. The present invention also relates to functional sweetener compositions and methods that can improve the tastes of non-caloric or low-caloric natural and/or synthetic high-potency sweeteners by imparting a more sugar-like taste or characteristic. In particular, the functional sweetener compositions and methods provide a more sugar-like temporal profile, including sweetness onset and sweetness linger, and/or a more sugar-like flavor profile.

Claims

1. A functional sweetener composition comprising:

at least one anti-inflammatory agent;

at least one high-potency sweetener; and

at least one sweet taste improving composition.

2. The functional sweetener composition of claim 1, wherein the at least one anti-inflammatory agent comprises at least one natural anti-inflammatory agent, at least one pharmaceutical anti-inflammatory agent, or combinations thereof.

3. The functional sweetener composition of claim 1, wherein the at least one anti-inflammatory agent comprises at least one natural anti-inflammatory agent selected from the group consisting of a polyphenol, a boswellia extract, a white willow bark extract, a ginger root extract, bromelain, quercetin, devil'"'"'s claw, horseradish, a slippery elm extract, a green tea extract, a honeysuckle extract, and combinations thereof.

The functional sweetener composition of claim 1, wherein the at least one anti-inflammatory agent comprises at least one polyphenol selected from the group consisting of catechins, proanthocyanidins, procyanidins, anthocyanins, quercerin, rutin, reservatrol, isoflavones, curcumin, punicalagin, ellagitannin, hesperidin, narigin, citrus flavonoids, chlorogenic acids, and combinations thereof.

5. The functional sweetener composition of claim 1, wherein the at least one anti-inflammatory agent comprises at least one pharmaceutical anti-inflammatory agent selected from the group consisting of cortisone, Acetaminophen, aspirin, ibuprofen, naproxen, and combinations thereof.

The functional sweetener composition of claim 1, wherein the at least one anti-inflammatory agent comprises at least one natural anti-inflammatory agent selected from the group consisting of Sinomenium acutum extract, Aconitum carmichaeli extract, Paeonia lactiflora extract, Paeonia suffruticosa extract, Curcumae longae extract, and combinations thereof.

7. The functional sweetener composition of claim 1, further comprising glucosamine, ascorbic acid, or combinations thereof.

The functional sweetener composition of claim 1, wherein the at least one high-potency sweetener comprises a natural high-potency sweetener selected from the group consisting of rebaudioside A, rebaudioside B, rebaudioside C, rebaudioside D, rebaudioside E, rebaudioside F, dulcoside A, dulcoside B, rubusoside, stevia, stevioside, mogroside IV, mogroside V, Luo Han Guo sweetener, siamenoside, monatin and its salts (monatin SS, RR, RS, SR), curculin, glycyrrhizic acid and its salts, thaumatin, monellin, mabinlin, brazzein, hernandulcin, phyllodulcin, glycyphyllin, phloridzin, trilobatin, baiyunoside, osladin, polypodoside A, pterocaryoside A, pterocaryoside B, mukurozioside, phlomisoside I, periandrin I, abrusoside A, cyclocarioside I and combinations thereof.

The functional sweetener composition of claim 1, wherein the at least one high-potency sweetener comprises a synthetic high-potency sweetener selected from the group consisting of sucralose, acesulfame potassium and other salts, aspartame, alitame, saccharin, neohesperidin dihydrochalcone, cyclamate, neotame, N-[N-[3-(3-hydroxy-4-methoxyphenyl)propyl]-L-α

-aspartyl]-L-phenylalanine 1-methyl ester, N-[N-[3-(3-hydroxy-4-methoxyphenyl)-3-methylbutyl]-L-α

-aspartyl]-L-phenylalanine 1-methyl ester, N-[N-[3-(3-methoxy-4-hydroxyphenyl)propyl]-L-α

-aspartyl]-L-phenylalanine 1-methyl ester, salts thereof, and combinations thereof.

The functional sweetener composition of claim 1, wherein the at least one sweet taste improving composition comprises a first sweet taste improving composition selected from the group consisting of carbohydrates, polyols, amino acids and their corresponding salts, polyamino acids and their corresponding salts, sugar acids and their corresponding salts, organic acids, inorganic acids, organic salts, inorganic salts, bitter compounds, flavorants, astringent compounds, polymers, proteins or protein hydrolysates, surfactants, emulsifiers, flavonoids, alcohols, and combinations thereof.

11. The functional sweetener composition of claim 1, wherein the at least one sweet taste improving composition imparts a more sugar-like temporal profile to the functional sweetener composition than the sweetener would have without the at least one sweet taste improving composition.

The functional sweetener composition of claim 1, further comprising at least one second sweet taste improving composition different from the at least one first sweet taste improving composition and selected from the group consisting of carbohydrates, polyols, amino acids and their corresponding salts, polyamino acids and their corresponding salts, sugar acids and their corresponding salts, organic acids, inorganic acids, organic salts, inorganic salts, bitter compounds, flavorants, astringent compounds, polymers, proteins or protein hydrolysates, surfactants, emulsifiers, flavonoids, alcohols, and combinations thereof.

13. The functional sweetener composition of claim 12, further comprising at least one third sweet taste improving composition different from the at least one first sweet taste improving composition and the at least one second sweet taste improving composition and selected from the group consisting of carbohydrates, polyols, amino acids and their corresponding salts, polyamino acids and their corresponding salts, sugar acids and their corresponding salts, organic acids, inorganic acids, organic salts, inorganic salts, bitter compounds, flavorants, astringent compounds, polymers, proteins or protein hydrolysates, surfactants, emulsifiers, flavonoids, alcohols, and combinations thereof.

14. The functional sweetener composition of claim 1, wherein the at least one high-potency sweetener is rebaudioside A, stevioside, stevia, or combinations thereof.

15. The functional sweetener composition of claim 14, wherein the at least one sweet taste improving composition comprises at least one polyol.

16. The functional sweetener composition of claim 15, wherein the at least one polyol comprises erythritol.

17. The functional sweetener composition of claim 15, wherein the at least one polyol comprises xylitol.

18. The functional sweetener composition of claim 14, wherein the at least one sweet taste improving composition comprises at least one amino acid.

19. The functional sweetener composition of claim 18, wherein the at least one amino acid comprises glycine, alanine, proline, hydroxyproline, glutamine, or combinations thereof.

20. The functional sweetener composition of claim 14, wherein the at least one sweet taste improving composition comprises at least one polyamino acid.

21. The functional sweetener composition of claim 20, wherein the at least one polyamino acid comprises poly-L-aspartic acid, poly-L-α

-lysine, poly-L-ε

-lysine, poly-L-α

-omithine, poly-L-ε

-ornithine, poly-L-arginine, salts thereof, or combinations thereof.

22. The functional sweetener composition of claim 14, wherein the at least one sweet taste improving composition comprises at least one inorganic salt.

23. The functional sweetener composition of claim 22, wherein the at least one inorganic salt comprises a sodium, potassium, calcium, or magnesium salt.

24. The functional sweetener composition of claim 22, further comprising at least one inorganic phosphate.

25. The functional sweetener composition of claim 24, wherein the at least one inorganic phosphate comprises a sodium, potassium, calcium, or magnesium phosphate.

26. The functional sweetener composition of claim 22, further comprising at least one inorganic chloride.

27. The functional sweetener composition of claim 26, wherein the at least one inorganic chloride comprises a sodium, potassium, calcium, or magnesium chloride.

28. The functional sweetener composition of claim 14, wherein the at least one sweet taste improving composition comprises at least one carbohydrate.

29. The functional sweetener composition of claim 28, wherein the at least one carbohydrate comprises sucrose, high fructose corn syrup, glucose, or sucrose.

30. The functional sweetener composition of claim 29, wherein the at least one carbohydrate is present in the functional sweetener composition in an amount from about 10,000 ppm to about 80,000 ppm of the composition.

31. The functional sweetener composition of claim 14, wherein the at least one sweet taste improving composition comprises at least one synthetic high-potency sweetener.

32. The functional sweetener composition of claim 31, wherein the at least one synthetic high-potency sweetener comprises sucralose, acesulfame potassium or other salts, aspartame, alitame, saccharin, neohesperidin dihydrochalcone, cyclamate, neotame, N-[N-[3-(3-hydroxy-4-methoxyphenyl)propyl]-L-α

-aspartyl]-L-phenylalanine 1-methyl ester, N-[N-[3-(3-hydroxy-4-methoxyphenyl)-3-methylbutyl]-L-α

-aspartyl]-L-phenylalanine I-methyl ester, N-[N-[3-(3-methoxy-4-hydroxyphenyl)propyl]-L-α

-aspartyl]-L-phenylalanine 1-methyl ester, salts thereof, and combinations thereof.

33. The functional sweetener composition of claim 32, wherein the at least one synthetic high-potency sweetener comprises saccharin or acesulfame potassium or other salts.

34. The functional sweetener composition of claim 33, wherein the at least one synthetic sweetener is present in the functional sweetener composition in an amount from about 10 ppm to about 100 ppm of the composition.

35. The functional sweetener composition of claim 14, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 70% rebaudioside A by weight on a dry basis.

36. The functional sweetener composition of claim 14, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 80% rebaudioside A by weight on a dry basis.

37. The functional sweetener composition of claim 14, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 90% rebaudioside A by weight on a dry basis.

38. The functional sweetener composition of claim 14, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 97% rebaudioside A by weight on a dry basis.

39. The functional sweetener composition of claim 14, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 98% rebaudioside A by weight on a dry basis.

40. The functional sweetener composition of claim 14, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 99% rebaudioside A by weight on a dry basis.

43. The functional sweetened composition of claim 40, wherein the at least one anti-inflammatory agent comprises at least one natural anti-inflammatory agent selected from the group consisting of a polyphenol, a boswellia extract, a white willow bark extract, a ginger root extract, bromelain, quercetin, devil'"'"'s claw, horseradish, a slippery elm extract, a green tea extract, a honeysuckle extract, and combinations thereof.

44. The functional sweetened composition of claim 40, wherein the at least one anti-inflammatory agent comprises at least one polyphenol selected from the group consisting of catechins, proanthocyanidins, procyanidins, anthocyanins, quercerin, rutin, reservatrol, isoflavones, curcumin, punicalagin, ellagitannin, hesperidin, narigin, citrus flavonoids, chlorogenic acids, and combinations thereof.

41. A functional sweetened composition comprising:

a sweetenable composition;

at least one anti-inflammatory agent;

at least one high-potency sweetener; and

at least one sweet taste improving composition.

42. The functional sweetened composition of claim 41, wherein the at least one anti-inflammatory agent comprises at least one natural anti-inflammatory agent, at least one pharmaceutical anti-inflammatory agent, or combinations thereof.

45. The functional sweetened composition of claim 41, wherein the at least one anti-inflammatory agent comprises at least one pharmaceutical anti-inflammatory agent selected from the group consisting of cortisone, Acetaminophen, aspirin, ibuprofen, naproxen, and combinations thereof.

46. The functional sweetened composition of claim 41, wherein the at least one anti-inflammatory agent comprises at least one natural anti-inflammatory agent selected from the group consisting of Sinomenium acutum extract, Aconitum carmichaeli extract, Paeonia lactiflora extract, Paeonia suffruticosa extract, Curcumae longae extract, and combinations thereof.

47. The functional sweetened composition of claim 41, further comprising glucosamine, ascorbic acid, or combinations thereof.

The functional sweetened composition of claim 41, wherein the at least one high-potency sweetener comprises a natural high-potency sweetener selected from the group consisting of rebaudioside A, rebaudioside B, rebaudioside C, rebaudioside Dt rebaudioside F, rebaudioside F, dulcoside A, dulcoside B, rubusoside, stevia, stevioside, mogroside IV, mogroside V, Luo Han Guo sweetener, siamenoside, monatin and its salts (monatin SS, RR, RS, SR), curculin, glycyrrhizic acid and its salts, thaumatin, monellin, mabinlin, brazzein, hernandulcin, phyllodulcin, glycyphyllin, phloridzin, trilobatin, baiyunoside, osladin, polypodoside A, pterocaryoside A, pterocaryoside B, mukurozioside, phlomisoside I, periandrin I, abrusoside A, cyclocarioside I, and combinations thereof.

49. The functional sweetened composition of claim 41, wherein the at least one high-potency sweetener comprises a synthetic high-potency sweetener selected from the group consisting of sucralose, acesulfame potassium and other salts, aspartame, alitame, saccharin, neohesperidin dihydrochalcone, cyclamate, neotame, N-[N-[3-(3-hydroxy-4-methoxyphenyl)propyl]-L-α

-aspartyl]-L-phenylalanine 1-methyl ester, N-[N-[3-(3-hydroxy-4-methoxyphenyl)-3-methylbutyl]-L-α

-aspartyl]-L-phenylalanine 1-methyl ester, N-[N-[3-(3-methoxy-4-hydroxyphenyl)propyl]-L-α

-aspartyl]l-L-phenylalanine 1-methyl ester, salts thereof and combinations thereof.

50. The functional sweetened composition of claim 41, wherein the at least one sweet taste improving composition comprises a first sweet taste improving composition selected from the group consisting of carbohydrates, polyols, amino acids and their corresponding salts, polyamino acids and their corresponding salts, sugar acids and their corresponding salts, organic acids, inorganic acids, organic salts, inorganic salts, bitter compounds, flavorants, astringent compounds, polymers, proteins or protein hydrolysates, surfactants, emulsifiers, flavonoids, alcohols, and combinations thereof.

The functional sweetened composition of claim 41, wherein the at least one sweet taste improving composition imparts a more sugar-like temporal profile to the sweetened composition than the at least one high-potency sweetener would have without the at least one sweet taste improving composition.

The functional sweetened composition of claim 50, further comprising at least one second sweet taste improving composition different from the at least one first sweet taste improving composition and selected from the group consisting of carbohydrates, polyols, amino acids and their corresponding salts, polyamino acids and their corresponding salts, sugar acids and their corresponding salts, organic acids, inorganic acids, organic salts, inorganic salts, bitter compounds, flavorants, astringent compounds, polymers, proteins or protein hydrolysates, surfactants, emulsifiers, flavonoids, alcohols, and combinations thereof.

53. The functional sweetened composition of claim 52, further comprising at least one third sweet taste improving composition different from the at least one first sweet taste improving composition and the at least one second sweet taste improving composition and selected from the group consisting of carbohydrates, polyols, amino acids and their corresponding salts, polyamino acids and their corresponding salts, sugar acids and their corresponding salts, organic acids, inorganic acids, organic salts, inorganic salts, bitter compounds, flavorants, astringent compounds, polymers, proteins or protein hydrolysates, surfactants, emulsifiers, flavonoids, alcohols, and combinations thereof.

54. The functional sweetened composition of claim 41, wherein the at least one high-potency sweetener is rebaudioside A, stevia, stevioside, or combinations thereof.

55. The functional sweetened composition of claim 54, wherein the at least one sweet taste improving composition comprises at least one polyol.

56. The functional sweetened composition of claim 55, wherein the at least one polyol comprises erythritol.

57. The functional sweetened composition of claim 55, wherein the at least one polyol comprises xylitol.

58. The functional sweetened composition of claim 54, wherein the at least one sweet taste improving composition comprises at least one amino acid.

59. The functional sweetened composition of claim 58, wherein the at least one amino acid comprises glycine, alanine, proline, hydroxyproline, glutamine, or combinations thereof.

60. The functional sweetened composition of claim 54, wherein the at least one sweet taste improving composition comprises at least one polyamino acid.

61. The functional sweetened composition of claim 60, wherein the at least one polyamino acid comprises poly-L-aspartic acid, poly-L-α

-lysine, poly-L-ε

-lysine, poly-L-α

-omithine, poly-L-ε

-omithine, poly-L-arginine, salts thereof, or combinations thereof.

62. The functional sweetened composition of claim 54, wherein the at least one sweet taste improving composition comprises at least one inorganic salt.

63. The functional sweetened composition of claim 62, wherein the at least one inorganic salt comprises a sodium, potassium, calcium, or magnesium salt.

64. The functional sweetened composition of claim 62, further comprising at least one inorganic phosphate.

65. The functional sweetened composition of claim 64, wherein the at least one inorganic phosphate comprises a sodium, potassium, calcium, or magnesium phosphate.

66. The functional sweetened composition of claim 60, further comprising at least one inorganic chloride.

67. The functional sweetened composition of claim 66, wherein the at least one inorganic chloride comprises a sodium, potassium, calcium, or magnesium chloride.

68. The functional sweetened composition of claim 54, wherein the at least one sweet taste improving composition comprises at least one carbohydrate.

69. The functional sweetened composition of claim 68, wherein the at least one carbohydrate comprises sucrose, high fructose corn syrup, glucose, or sucrose.

70. The functional sweetened composition of claim 68, wherein the at least one carbohydrate is present in the functional sweetened composition in an amount from about 10,000 ppm to about 80,000 ppm of the composition.

71. The functional sweetened composition of claim 54, wherein the at least one sweet taste improving composition comprises at least one synthetic high-potency sweetener.

72. The functional sweetened composition of claim 71, wherein the at least one synthetic high-potency sweetener comprises sucralose, acesulfame potassium or other salts, aspartame, alitame, saccharin, neohesperidin dihydrochalcone, cyclamate, neotame, N-[N-[3-(3-hydroxy-4-methoxyphenyl)propyl]-L-α

-aspartyl]-L-phenylalanine 1-methyl ester, N-[N-[3-(3-hydroxy-4-methoxyphenyl)-3-methylbutyl]-L-α

-aspartyl]-L-phenylalanine 1-methyl ester, N-[N-[3-(3-methoxy-4-hydroxyphenyl)propyl]-L-α

-aspartyl]-L-phenylalanine 1-methyl ester, salts thereof and combinations thereof.

73. The functional sweetened composition of claim 71, wherein the at least one synthetic high-potency sweetener comprises saccharin or acesulfame potassium or other salts.

74. The functional sweetened composition of claim 73, wherein the at least one synthetic sweetener is present in the functional sweetened composition in an amount from about 10 ppm to about 100 ppm of the composition.

75. The functional sweetened composition of claim 54, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 70% rebaudioside A by weight on a dry basis.

76. The functional sweetened composition of claim 54, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 80% rebaudioside A by weight on a dry basis.

77. The functional sweetened composition of claim 54, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 90% rebaudioside A by weight on a dry basis.

78. The functional sweetened composition of claim 54>

wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 97% rebaudioside A by weight on a dry basis.

79. The functional sweetened composition of claim 54, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 98% rebaudioside A by weight on a dry basis.

80. The functional sweetened composition of claim 54, wherein the rebaudioside A comprises rebaudioside A in a purity greater than about 99% rebaudioside A by weight on a dry basis.

81. The functional sweetened composition of claim 41, wherein the sweetened composition comprises a food, beverage, pharmaceutical, tobacco, nutraceutical, oral hygienic, or cosmetic.

82. A functional beverage comprising the sweetened composition of claim 410.

83. The functional beverage of claim 82, wherein the beverage is a non-carbonated beverage or a carbonated beverage.

84. The functional beverage of claim 83, wherein the carbonated beverage is a cola.

85. The functional beverage of claim 83, wherein the carbonated beverage is a fruit-flavored beverage.

86. The functional beverage of claim 83, wherein the carbonated beverage is a citrus-flavored beverage.

87. The functional beverage of claim 86, wherein the citrus-flavored beverage is a lemon-lime flavored beverage or a orange-flavored beverage.

88. The functional beverage of claim 83, wherein the carbonated beverage is a root beer.

89. The functional beverage of claim 82, wherein the beverage is a fruit juice, fruit-favored, or fruit-containing beverage.

90. The functional beverage of claim 82, wherein the beverage is a vegetable juice or vegetable containing beverage.

91. The functional beverage of claim 82, wherein the beverage is tea.

92. The functional beverage of claim 82, wherein the beverage is coffee.

93. The functional beverage of claim 82, wherein the beverage comprises a dairy component.

94. The functional beverage of claim 82, wherein the beverage is a sports drink.

95. The functional beverage of claim 82, wherein the beverage is an energy drink.

96. The functional beverage of claim 82, wherein the beverage is a flavored water.
