Abstract

An edible mix includes granulated lemon juice solids, granulated citric acid or granulated malic acid, and encapsulated natural lemon oil. In one embodiment, the edible mix also includes granulated maltodextrin, granulated ascorbic acid, and granulated lactose. In one embodiment, the components of the edible mix are mechanically mixed together to form a substantially homogeneous composition. In one embodiment, several of the components are blended by an agglomeration method.

Claims

39. An edible crystalline composition, comprising,

granulated citric acid or granulated malic acid;

natural lime oil in an extruded carbohydrate matrix capsule;

granulated lime juice solids having dehydrated lime juice; and

granulated ascorbic acid,

wherein the crystalline composition tastes and smells like fresh lime.

40. The edible composition of claim 39,

wherein the granulated lime juice solids are between 5% and 10% by weight of the total edible mix, the granulated citric acid is between 40% and 50% by weight of the total edible mix, the natural lime oil in extruded carbohydrate matrix capsules are between 5% and 10% by weight of the total edible mix, and the granulated ascorbic acid is between 2% and 5% by weight of the total edible mix.

41. The edible composition of claim 39, wherein the extruded natural lime oil is at least 0.05% of the weight of the edible mix.

42. The edible composition of claim 39, wherein the extruded natural lime oil is between 0.60% and 0.90% of the weight of the edible mix.

43. The edible composition of claim 39, wherein the extruded carbohydrate matrix capsules dissolve when contacted by a liquid.

44. The composition of claim 39, wherein the crystalline composition does not contain a preservative.

45. The composition of claim 39, further comprising a bulking agent.

46. An edible crystalline composition, comprising,

granulated citric acid or granulated malic acid;

natural orange oil in an extruded carbohydrate matrix capsule;

granulated orange juice solids having dehydrated orange juice; and

granulated ascorbic acid,

wherein the crystalline composition tastes and smells like fresh orange.

47. The edible composition of claim 46,

wherein the granulated orange juice solids are between 5% and 10% by weight of the total edible mix, the granulated citric acid is between 40% and 50% by weight of the total edible mix, the natural orange oil in extruded carbohydrate matrix capsules are between 5% and 10% by weight of the total edible mix, and the granulated ascorbic acid is between 2% and 5% by weight of the total edible mix.

48. The edible composition of claim 46, wherein the extruded natural orange oil is at least 0.05% of the weight of the edible mix.

49. The edible composition of claim 46, wherein the extruded natural orange oil is between 0.60% and 0.90% of the weight of the edible mix.

50. The edible composition of claim 46 wherein the extruded carbohydrate matrix capsules dissolve when contacted by a liquid.

51. The composition of claim 46, wherein the crystalline composition does not contain a preservative.

52. The composition of claim 46, further comprising a bulking agent.

53. A method of using an edible crystalline composition, comprising,

adding an edible crystalline composition to a beverage or food item,

wherein the crystalline composition comprises granulated citric acid or granulated malic acid;

natural citrus oil in an extruded carbohydrate matrix capsule;

granulated citrus juice solids having dehydrated citrus juice; and

granulated ascorbic acid.

54. The method of claim 53, wherein the citrus oil is lemon oil and the citrus juice is lemon juice, and wherein the crystalline composition tastes and smells like fresh lemon.

55. The method of claim 53, wherein the citrus oil is lime oil and the citrus juice is lime juice, and wherein the crystalline composition tastes and smells like fresh lime.

56. The method of claim 53, wherein the citrus oil is orange oil and the citrus juice is orange juice, and wherein the crystalline composition tastes and smells like fresh orange.

57. The method of claim 53, wherein the beverage is water or a soft drink.

58. The method of claim 53, wherein the food item is fish or seafood.

59. The method of claim 53, wherein the crystalline composition is added during cooking or baking a food item.

60. A method of manufacturing an edible crystalline composition, comprising:

mixing granulated citric acid, granulated lime juice solids, granulated ascorbic acid and extruded carbohydrate matrix capsules containing natural lime oil, to form a crystalline composition that tastes and smells like fresh lime.

61. A method of manufacturing an edible crystalline composition, comprising:

mixing granulated citric acid, granulated orange juice solids, granulated ascorbic acid and extruded carbohydrate matrix capsules containing natural orange oil, to form a crystalline composition that tastes and smells like fresh orange.
