Abstract

A vegetable-based food product, without saccharose, lactose and egg, includes a base ingredient having gluten-free cereal seeds, polished and/or wholegrain, and/or sprouted seeds and/or sprouted wholegrain seeds, thickeners and flavorings, which give such a food product a food substitute character, to provide, for example, a substitute for cheese and/or meat and/or fish and/or milk and/or for sweet preparations suitable to be used as such or in industrial or home-made preparations and/or a vegetable drink.

Claims

1. Vegetable-based food product, free from saccharose, lactose and egg, comprising:

a base ingredient comprising cereal seeds, selected from one or more of polished or wholegrain seeds, said base ingredient being in form of a fluid or an anhydrous powder, wherein said cereal seeds are gluten-free cereal seeds; and

thickeners and flavorings, which give said food product a food substitute character suitable for use as such or in industrial or home-made preparations, or as a milk substitute or a vegetable drink.

2. The food product according to claim 1, wherein said wholegrain seeds are sprouted seeds.

3. The food product according to claim 1, wherein said cereal seeds are rice seeds.

4. The food product according to claim 1, wherein said gluten-free cereal seeds are selected from the group consisting of:

rice, corn, millet, buckwheat, sorghum, amaranth, and quinoa.

5. The food product according to claim 1, wherein said thickeners comprise one or more of carrageenan, agar-agar, starches, carob seeds, guar, xanthan, or other substance commonly used as a thickener.

The food product according to claim 1, wherein said flavorings comprise flavorings usually used in the food industry, natural or artificial type, benzaldehyde, benzoic aldehyde, anethole, g-nonalactone, eugenol, menthol, diacetyl and butyric acid, L carvone, vanillin, ethylvanillin, bismethylthiomethane, phenylmethylbutyrate, ethyl butanoate, ethyl acetate, amylacetateisovalerianateisomyl, Ylang Ylang, fencone, apiol, furylmethanethiol, alpha-furfurylmercaptan, β

-damascenonetetramethylpyrazine, phenylacetic acid, phenylethyl acetate, g-undecalactone, allyl caproate, frambinone, raspberry ketone, ethyl cinnamate, methylethylbutanoate, methylthiopropanol, diallyl disulphide, allylpropyl disulphide, methoxymethylpyrazine, heptanoloctanol alcohol, valerenic acid, isobutyric acid, heptanonemethylthiobutyrate, trimethylamine, methylpyridylketone, ethylhydroxybutanoate, pyroligneous acid, furaneol, methoxymethylpyrazine, other flavorings usually used for as a flavoring, aromatic molecules usually used to flavor processed meats, the flavourings of aromatic plants, both of natural and synthetic kind, beechwood smoke, spices, or flavorings for spices.

7. The food product according to claim 1, wherein said food product comprises lipids.

8. The food product according to claim 1, wherein said food product comprises seeds rich in bioavailable nutritional substances obtained through enzyme processes.

9. The food product according to claim 1, wherein said food product comprises a percentage of water between 1% and 95%.

10. The food product according to claim 1, wherein said food product is in solid form.

11. The food product according to claim 1, wherein said food product is in liquid form.

12. The food product according to claim 1, further comprising water.

13. The food product according to claim 1, wherein said base ingredient is in fluid form and comprises a protein or fibrous portion and a sugary liquid component and wherein said protein or fibrous portion is suitable for being separated from said liquid component.

The food product according to claim 13, wherein said protein or fibrous portion is suitable for being used as such or for enriching said food product with proteins or noble substances, or is suitable for being used as a component of cosmetic or medical compositions or as a component of food supplements.

15. The food product according to claim 13, wherein said sugary liquid component is suitable for being used as such or in concentrated form or to sweeten said food product, or is suitable for being used as a component of cosmetic or medical compositions or as a component of food supplements.

16. The food product according to claim 1, wherein said food product is pasteurized, sterilized by UHT, made suitable for storage, or treated at a pressure within a range between 3000 and 15000 bar.

17. The food product according to claim 1, wherein said base ingredient comprises legume seeds.

The food product according claim 1, wherein said base ingredient comprises legume seeds selected from the group consisting of beans, broad beans, peas, lupins, chickpeas, peanuts, lentils, chuckling, fabaceae, acacia (Acacia), pagoda tree (Sophora), false acacia (Robinia pseudoacacia), or carub tree (Ceratonia siliqua).

19. The food product according to claim 1, wherein said base ingredient comprising seeds obtained from edible or officinal herbs.

20. The food product according to claim 19, wherein said seeds are whole.

21. The food according to claim 19, wherein said seeds are micronized in order to obtain micronized particles.

23. The food product according to claim 1, wherein said food product is a vegetable substitute for cheese, meat, fish, or sweet preparations.

22. The food product according to claim 22, wherein said micronized particles have a size of less than 30 microns if subjected to a pressure between 50 and 1500 bar.
