Abstract

A cutting assembly for cutting a meat or food product passing along a path of travel and comprising a blade assembly including a cutting roller having a plurality of cutting blades radially mounted thereon and movable relative to the path of travel. A mating assembly interacts with the plurality of cutting blades to accomplish a multipoint cutting procedure which is facilitated by the concurrent rotation of the cutting roller and cutting blades as well as a linear reciprocal travel thereof transverse to the path of travel. A stabilizing assembly is provided to restrict the dimensional variance of the spacing between the cutting roller and mate roller through which the meat product travels and an ejecting assembly to remove cut portions from between the cutting blades and back onto the path of travel. The cutting assembly preferably includes a modular construction disposal within and removal from an operative position along a processing line associated with the path of travel.

Claims

1. An assembly for cutting meat passing along a path of travel, said assembly comprising:

a blade assembly including a cutting roller comprising a plurality of cutting blades rotatable with said cutting roller relative to the path of travel,

a mating assembly including a mate roller rotatable relative to the path of travel and disposed at a predetermined spacing from said cutting roller,

said predetermined spacing dimension to facilitate passage of the meat along the path of travel and between said cutting roller and said mate roller concurrent to cutting engagement thereof by said cutting blades,

a stabilizing assembly disposed in displacement restricting engagement with both said cutting roller and said mate roller, and

said stabilizing assembly disposed and structured to restrict dimensional variance of said predetermined spacing at least during cutting of the meat and passage thereof through said predetermined spacing.

2. An assembly as recited in claim 1 wherein said stabilizing assembly is further disposed in displacement restricting engagement with said plurality of cutting blades.

3. An assembly as recited in claim 1 wherein said stabilizing assembly comprises a first stabilizing structure disposed in displacement restricting engagement with said mate roller.

4. An assembly as recited in claim 3 wherein said stabilizing structure movably engages said mate roller and is disposed to restrict displacement of said mate roller away from said cutting roller and outwardly from said predetermined spacing and the path of travel.

5. An assembly as recited in claim 4 wherein said first stabilizing structure comprises at least one support assembly movably engaging said mate roller in supporting relation thereto.

6. An assembly as recited in claim 5 wherein said one support assembly comprises a support roller disposed in movable at least partially supporting relation to said mate roller and substantially oppositely disposed relative to said cutting roller.

An assembly as recited in claim 5 further comprising a plurality of support rollers disposed in spaced relation to one another along a length of said mate roller, each of said support rollers disposed in movable, at least partially supporting relation to said mate roller and substantially oppositely disposed relative to said cutting roller.

8. An assembly as recited in claim 3 wherein said stabilizing assembly comprises a second stabilizing structure interconnected between said cutting roller and said mate roller and disposed to restrict displacement of said cutting roller and said mate roller toward one another.

9. An assembly as recited in claim 8 wherein said second stabilizing structure comprises a first stabilizing segment connected to said cutting roller and rotatable therewith and a second stabilizing segment connected to said mate roller and rotatable therewith;

said first and second stabilizing segments disposed in movable engagement with one another.

10. An assembly as recited in claim 9 wherein said first and second stabilizing segments disposed in rotational engagement with one another concurrent to rotation of said cutting roller.

An assembly as recited in claim 3 wherein said stabilizing assembly further comprises a third stabilizing structure disposed in engagement with a predetermined one of said plurality of cutting blades and further disposed to restrict displacement of said cutting roller outwardly from said mate roller.

12. An assembly as recited in claim 11 wherein said predetermined cutting blade is disposed in diametrical alignment with a penetrating, cutting one of said plurality of cutting blades.

13. An assembly as recited in claim 12 wherein said third stabilizing assembly is movably disposable relative to said cutting roller and successively positioned in displacement restricting relation with different predetermined ones of said plurality of cutting blades.

14. An assembly as recited in claim 13 wherein each of said predetermined cutting blades is successively positioned in co-axial alignment with a penetrating, cutting one of said plurality of cutting blades.

15. An assembly as recited in claim 13 wherein said third stabilizing assembly further comprises at least one pressure roller rotatable relative to said cutting roller, said one pressure roller structured for successive engagement with each of said plurality of cutting blades upon rotation of said cutting roller.

16. An assembly as recited in claim 15 wherein said third stabilizing assembly further comprises a plurality of pressure rollers disposed along a length of said cutting roller and concurrently rotatable with one another and relative to said cutting roller;

each of said pressure rollers structured to successively engage a common one of said plurality of said cutting blades in displacement of restricting engagement with said cutting roller.

17. An assembly as recited in claim 15 wherein said one pressure roller comprises a plurality of pressure slots each configured to receive an outer end of one of said plurality of cutting blades in non engaging relation to a cutting edge thereof.

18. An assembly for meat passing along a path of travel, said assembly comprising:

a blade assembly including a cutting roller comprising a plurality of cutting blades rotatable relative to the path of travel,

a mating assembly including at least one mate roller rotatable relative to the path of travel and disposed in interactive relation to said plurality of cutting blades,

said cutting roller and said mate roller disposed at a predetermined spacing from one another;

said predetermined spacing at least partially defining the path of travel and dimensioned to facilitate passage of the meat between the cutting roller and the mate roller concurrent to engagement with the plurality of cutting blades,

a stabilizing assembly comprising a plurality of stabilizing structures disposed in displacement restricting engagement with said cutting roller or said mate roller, and

said plurality of stabilizing structures collectively disposed and structured to restrict dimensional variance of said predetermined spacing at least during passage of the meat along said path of travel and through said predetermined spacing.

19. An assembly as recited in claim 18 wherein at least one of said stabilizing structures is disposed in displacement restricting engagement with said plurality of cutting blades.

20. An assembly as recited in claim 18 wherein said plurality of said stabilizing structures comprises a support assembly movably engaging said mate roller and fixedly positioned relative thereto and said path of travel.

21. An assembly as recited in claim 20 wherein said support assembly comprises at least one support roller disposed in rotational engagement with said mate roller.

An assembly as recited in claim 21 further comprising a plurality of support rollers disposed in spaced relation to one another along a length of said mate roller, each of said support rollers disposed in movable, at least partially supporting relation to said mate roller and substantially oppositely disposed relative to said cutting roller.

23. An assembly as recited in claim 18 wherein said plurality of stabilizing structures comprises a first stabilizing segment connected to said cutting roller and rotatable therewith and a second stabilizing segment connected to said mate roller and rotatable therewith;

said first and second stabilizing segments disposed in movable engagement with one another.

24. An assembly as recited in claim 23 wherein said first and second stabilizing segments disposed in rotational engagement with one another concurrent to rotation of said cutting roller.

25. An assembly as recited in claim 18 wherein at least one of said plurality of stabilizing structures is disposed in engagement with a predetermined one of said plurality of said cutting blades and further disposed to restrict displacement of said cutting roller outwardly away from said mate roller.

26. An assembly as recited in claim 25 wherein said predetermined one of said cutting blades is disposed in diametrical alignment with a penetrating one of said plurality of cutting blades disposed in an operative alignment with said mate roller.

27. An assembly as recited in claim 26 wherein said one stabilizing structure is movably disposed relative to said cutting roller and successively positioned in displacement restricting relation with different predetermined ones of said plurality of cutting blades.

28. An assembly as recited in claim 27 wherein each of said predetermined ones of said cutting blades is successively positioned in co-axial alignment with a penetrating one of said plurality of cutting blades disposed in an operative alignment with said mating roller.

29. An assembly as recited in claim 27 wherein said one stabilizing structure further comprises at least one pressure roller rotatable relative to said cutting roller, said one pressure roller structured for successive engagement with each of said plurality of cutting blades upon rotation of said cutting roller.

30. An assembly as recited in claim 29 wherein said one stabilizing structure comprises a plurality of pressure rollers disposed along a length of said cutting roller and concurrently rotatable with one another and relative to said cutting roller;

each of said pressure rollers disposed in successive engagement with a common one of said plurality of cutting blades and in displacement restricting engagement with said cutting roller.

31. An assembly as recited in claim 29 wherein said one pressure roller comprises a plurality of pressure slots each configured to receive an outer end of one of said plurality of cutting blades in non-engaging relation to a cutting edge thereof.
