Abstract
C3-C4 Hydroxyalkyl carboxymethyl cellulose ethers having a C3-C4 hydroxyalkyl MS of at least about 1.2 and a carboxymethyl DS of about 0.2-0.6 are superior cellulose ether foam stabilizers for carbonated malt beverages. They are compatible with chemical pasteurizing agents and can be used to improve the foam properties of beverages so treated.
