1. An enzyme sensor for measuring a substrate concentration using an enzyme, comprising:

  • an electrically conductive carbon having a graphite structure for generating an electric potential responsive to a hydrogen ion concentration;

    an enzyme layer comprising an enzyme imparted with a cross-linked structure by a cross-linking agent coating a surface of said electrically conductive carbon having a graphite structure, said enzyme layer being capable of generating a change in said hydrogen ion concentration by promoting the chemical reaction of a substrate on which said enzyme is active; and

    measuring means for measuring the electric potential of said electrically conductive carbon having a graphite structure.
