1. A process of liquefying a granular starch slurry comprising:

  • (1)a) adding to the slurry an excess of carbonate ion in an amount of from about 2 mM to about 20 mM in excess of the amount of carbonate ion needed to adjust the pH of the slurry to a pH of about 5.0 to about 6.0 and adjusting the pH of the slurry to a pH from about 5.0 to about 6.0;

    b) adding to the slurry about 10 liquefons or more of an alpha-amylase per gram of dry starch in the slurry; and

    (2) heating the slurry from step (1) at a temperature from about 100°

    C. to about 105°

    C. for an initial period and then holding the slurry at a temperature from about 90°

    C. to about 100°

    C. for a length of time sufficient to liquefy the starch.
