1. A method of determining blood glucose concentration from non-invasive measurements of a state of polarization of light emitted by a luminescing center of blood which are dissolved and/or attached to optically active molecules of sugar and upon interaction rotate the initial polarization comprising:

  • a. illuminating sample tissue with a beam with linearly or circularly polarized light,b. said light having a wavelength absorbed by blood constituents,c. detecting emitted luminescence light from the tissue at a predetermined emission wavelength,d. analyzing the state of polarization of said emitted light,e. correlating the state of emitted light polarization with blood glucose concentration.
