1. A bread maker comprising:
- a baking oven main body;
a bread baking case set in said baking oven main body;
a heater for heating said bread baking case;
an internal temperature sensor for detecting a heating temperature of said bread baking case;
temperature control means for comparing a current value of the heating temperature with a reference value corresponding to a target temperature and performing a heater-on/off control operation based on a difference between the current value of the heating temperature and the reference value to adjust the current value to the target temperature, said temperature control means controlling the heating temperature in a mixing and kneading process, a fermenting process, and a baking process; and
reference value setting means for updating the reference value corresponding to the target temperature so as to be a different value from the target temperature every heater-on/off control operation, to cause the reference value to turn off said heater before the heating temperature reaches the target temperature when the heating temperature is increasing based on the heater-on control operation, and to cause the reference value to turn on said heater before the heating temperature reaches the target temperature when the heating temperature is decreasing based on the heater-off control operation.

5. A bread maker comprising:

a baking oven main body; an opening/closing cover mounted on an uppermost end of said baking oven main body; a bread baking case set in said baking oven main body; a heater for heating said bread baking case; an internal temperature sensor for detecting a heating temperature of said bread baking case; and temperature control means for comparing a current value of the heating temperature with a reference value corresponding to a target temperature, and performing a heater-on/off control operation based on a difference between the current value of the heating temperature and the reference value, to adjust the current value to the target temperature, wherein said internal temperature sensor is mounted at a position where a value obtained by subtracting a maximum value of a temperature fluctuation range of the heating temperature with respect to the target temperature from the number of times of turning on said heater for a predetermined period is substantially the largest.
