1. A process for preparing a gellan gum containing product comprising the steps of:

  • (a) providing a native gellan gum having linear tetrasaccharide repeat units of glucose residues having attached acetate and glycerate substituent groups;

    (b) treating the native gellan gum with a weak base for a time and at a temperature effective for reducing the total number of acetate and glycerate substituent groups on the repeat units and for removing a greater number of glycerate substituent groups so as to increase the proportion of acetate substituent groups to provide a modified gellan gum having gel-forming properties different from gel-forming properties of the native gellan gum; and

    (c) causing the modified gum to gel during preparation of the gellan gum-containing product.
