1. A process for production of an alcohol product comprising the steps of:
- (a) holding a slurry comprising water and granular starch at a temperature of 0°
C. to 20°
C below the initial gelatinization temperature of said granular starch for a period of 5 minutes to 12 hours,(b) fermenting the slurry of step (a) with a yeast at a temperature between 10°
C. and 35°
C. for a period of 20 to 250 hours to produce ethanol, wherein steps (a) and (b) are performed in the presence of an acid alpha-amylase activity, a maltose generating enzyme activity and an alpha-glucosidase activity.
