Abstract

The present invention is directed to a calcium-enriched chewable baked food product in which at least one piece of the food product provides the recommended daily DRI of elemental calcium. The calcium-enriched baked food product has a mouth feel, texture and taste substantially similar to a non-calcium-enriched baked food product. The food product also provides Vitamin D₃ in a range of 100-2400 IU and optionally may be enrobed with a flavored coating. The present invention is also directed to a method for producing the calcium-enriched food product.

Claims

1. A calcium-enriched baked food product comprising:

a calcium-enriched chewable baked food product with a mouth feel, texture and taste substantially similar to a same type of baked food product that is not calcium-enriched;

wherein the calcium-enriched baked food product comprises at least 2.78% elemental calcium and the source of elemental calcium is calcium citrate with a median particle size between about 3 μ

m to 6 μ

m, and

wherein the calcium-enriched baked food product has a moisture content of 13-15% by weight

wherein the calcium-enriched food product provides Vitamin D3 in a range of 100-2400 IU; and

,

wherein the calcium-enriched food product has a water activity of less than 0.8.

2. The baked food of claim 1, wherein the food product provides elemental calcium in the range of 100-1500 mg.

3. The baked food product of claim 2, wherein the food product provides elemental calcium in the range of 100-650 mg.

4. The baked food product of claim 3, wherein the elemental calcium is about 500 mg.

5. The baked food product of claim 1, wherein the range of Vitamin D₃ is 200-1200 N.

6. The baked food product of claim 1, wherein the food product is enrobed with a flavored coating.

7. The baked food product of claim 1, wherein less than 100% of the calcium source has a particle size less than 100 μ

m.

8. The baked food product of claim 7, wherein less than 99% of the calcium source has a particle size less than 40 μ

m.

9. The baked food product of claim 8, wherein less than 90% of the calcium source has a particle size less than 20 μ

m.

10. The baked food product of claim 1, wherein the food product is selected from a group consisting of a flavored cake, a brownie, and a strudel.

11. The baked food product of claim 10, wherein the food product is enrobed with a flavored coating.

12. The baked food product of claim 10, wherein the food product has a flavor selected from a group consisting of chocolate, chocolate mint, lemon, caramel, cappuccino, cinnamon, maple, butter, fruit flavors, vanilla, peanut butter, and carrot flavored cake.

13. The baked food product of claim 11, wherein the coating has a flavor selected from a group consisting of chocolate, chocolate mint, lemon, caramel, cappuccino, cinnamon, maple, butter, fruit flavors, vanilla, and peanut butter.

14. The baked food product of claim 1, wherein each piece of unenrobed food product has a weight in the range of 3.5 to 24 grams.

15. The baked food product of claim 6, wherein each piece of the food product is completely enrobed with 0.5-8 grams of coating.

16. The baked food product of claim 1, wherein each piece of food has a water activity of less than 0.75.

17. A calcium-enriched food product comprising:

a chewable calcium-enriched food product with a mouth feel, texture and taste substantially similar to a same type of food product that is not calcium-enriched; and

the calcium-enriched food product comprises at least 6.95% calcium citrate with a median particle size between about 3 μ

m to 6 μ

m, and

wherein the calcium-enriched baked food product has a moisture content of 13-15% by weight

wherein the calcium-enriched food product provides Vitamin D3 in a range of 100-2400 IU; and

,

wherein the calcium-enriched food product has a water activity of less than 0.8.

18. The food product of claim 17, wherein the calcium-enriched food product comprises at least 26.6% calcium citrate.
