1. A method of selectively extracting glutelin proteins from a freshwater or saltwater algal biomass or algal culture comprised of intact algal cells, the method comprising:

  • heating the freshwater or saltwater algal biomass or algal culture to generate a heated extraction mixture comprising a liquid fraction and an algal biomass fraction, wherein the heating is to a temperature wherein the viscosity of the heated extraction mixture is reduced relative to the viscosity at room temperature, and the temperature is below the boiling point of the extraction mixture;

    raising the pH of the heated extraction mixture above pH 9 to enrich the liquid fraction in glutelin proteins; and

    separating the liquid fraction enriched in glutelin proteins from the algal biomass fraction.
