1. A process for hydration of non-hydratable phospholipids in a vegetable oil comprising:

  • a) mixing an acid and the vegetable oil to form an emulsion;

    b) mixing a base with the emulsion to obtain a pretreated mixture, the pretreated mixture having droplets containing acid and droplets containing base;

    c) compressing pretreated mixture to reduce the volume of the droplets containing acid and the droplets containing base, thereby forming a compressed mixture;

    d) decompressing the compressed mixture, said decompressing step carried out in the range of 1×

    105 MPa per second to about 3×

    106 MPa per second, causing the droplets containing acid and the droplets containing base to burst into smaller droplets.
