- introducing an expression cassette into the plant, wherein the expression cassette comprises a polynucleotide encoding an AT10 acyltransferase, and wherein the acyltransferase has at least 95% identity to amino acids 4 to 434 of SEQ ID NO;
2,culturing the plant under conditions in which the acyltransferase is overexpressed, andselecting a plant that has a decreased ferulic acid content compared to a wildtype plant in which the acyltransferase is not overexpressed.
