1. A method of controlling aqueous droplets within an emulsion comprising a non-aqueous continuous fluid, the method comprising:

  • providing a microfluidic channel formed by two substantially parallel or non-parallel walls, wherein each wall comprises one or more opposing ports, wherein the microfluidic channel contains an emulsion comprising aqueous droplets within a continuous non-aqueous fluid;

    causing the emulsion to flow from an upstream location within the microfluidic channel to a downstream location within the channel while introducing a non-emulsion continuous non-aqueous fluid from a port into the microfluidic channel such that the aqueous droplets within the emulsion move away from the walls of the microfluidic channel at a downstream location such that the flow area of the aqueous droplets is more restricted than at the upstream location, thereby packing more densely at the downstream location relative to the upstream location.
